Brownies with hot caramel fudge sauce

Brownies with hot caramel fudge sauce? Say what?! As a spend a fair amount of time in the kitchen baking various things I thought I would give you an easy and quick recipe to make brownies and if you want, hot sauce to go with it.



Brownies

What you will need; 
350g of Caster Sugar
175g of Margarine
3 eggs
100g of Plain Flour
75g of Chocolate Powder
a tsp of Baking Powder
Handful of chopped walnuts




Start by weighing out your marg and pop it on the hob to melt, whilst its melting weigh out your caster sugar. Turn the cooker on to 180 degrees.



When the marg has melted pour it in to the mixing bowl along with the sugar. Whisk this for 2 minutes. 

Add 3 beaten eggs to the mix and whisk again. 

Sift the plain flour, chocolate powder and baking powder into the mixing bowl, and add the walnuts. Finally whisk this all together.



Line a baking tray with marg put a layer of grease proof paper over the marg, and then put another layer of marg over the grease proof paper and pour the mixture in to the tray. 



Bake for 40 minutes, take the tray out of the oven and leave the brownies in the baking tray for 10 minutes, then turn over and leave to cool, once cooled cut into portions.

Caramel Fudge Sauce

This was daunting for me as I've never boiled sugar, however it came out alright in the end!

What you'll need;
100g  Caster sugar
2 tbsps Golden Syrup
2 tbsps Water
190ml Double Cream
60g Unsalted Butter
115g  Plain Chocolate, finely chopped
1 tsp Vanilla essence
Pinch salt


 

 Put the caster sugar, golden syrup and water into a sauce pan and cook on a high medium heat for about 8 minutes swirling the mixture around every so often, the colour of the sugar should turn to an amber shade.

 Once you've got this add the Butter, Cream and Chocolate and Vanilla Essence in to a saucepan. Be careful as my mixture did splash a little bit and it hurt! Stir until smooth. 

Serve with your brownies hot!




The sauce will keep for a week in the fridge and take a spoonful and a bit for each brownie you have and put the in microwave for 30 seconds.
